Gliadin is a class of proteins present in wheat and several other cereals within the grass genus Triticum. Gliadins, which are a component of gluten, are essential for giving bread the ability to rise properly during baking. Gliadins and glutenins are the two main components of the gluten fraction of the wheat seed. This gluten is found in products such as wheat flour. Gluten is split about evenly between the gliadins and glutenins, although there are variations found in different sources.
Gliadin is the water-soluble component of gluten, while glutenin is insoluble. There are three main types of gliadin (α, γ, and ω), to which the body is intolerant in coeliac (or celiac) disease. Diagnosis of this disease has recently been improving. Gliadin has primarily monomeric proteins, which differs from glutenin, which has primarily polymers (https://en.wikipedia.org/wiki/Gliadin).
Traditionally, gluten is defined as a cohesive, elastic protein that is left behind after starch is washed away from a wheat flour dough. Only wheat is considered to have true gluten. Gluten is actually made up of many different proteins.
There are two main groups of proteins in gluten, called the gliadins and the glutenins (www.celiac.com/articles/8/1/What-is-gluten-What-is-gliadin/Page1.html).

Kenmerkend is significant schuimen.
Biersoort: Lager
???
Biersoort Lager; Ale-type Tsjechische pils???
The aroma is a familiar, rich yet delicate lager malt with a spicy, musky undertone. A shade of earth and drying grass there too.
On tasting, there's a quick crisp and refreshing lager hit that develops into a light-bodied vanilla and caramel biscuit malt character (the malt is sourced locally, and the gluten protein then extracted to less than 0.5 mg/100 ml).
The texture is lively and rich with a refreshing amount of carbonation.
The malt backbone fades abruptly, but not before delivering a wee wave of lemony sweetness then settling down into a surprisingly long finish that also contains some sourness. Though light-bodied, there is enough of a malt character to balance out the local Saaz hops (www.heraldscotland.com/life_style/13207415.Beer_of_the_Week__Celia_gluten_free_lager_by_Zatec_Brewery/).

Heerlijk.
Appearance - chestnut to black in colour. Nice head. Nose - light chocolate but more of nuts and cream in actual fact. Taste - toffee and nuts. Palate - close to medium bodied with a creamy texture and a finish that could be fresher. Overall - a little sweet to be honest. Needs more bitterness to sweep away the rich malt notes (www.ratebeer.com/beer/zatec-celia-dark/278794/).
Venno (18) - - AUG 22, 2015

Bludice, 29 juni 2014
Donker mahonie kleur, zuiver.

Zatec beer is new to the outside world but has been brewed in the heart of the world’s most famous hop region since 1004. The Zatec brewery occupies the site of the old Zatec Castle of which one tower and the huge cellars remain, today’s brewery buildings were completed in 1801 (www.ratebeer.com/beer/zatec-blue-label-bright-lager/57592/, www.ratebeer.com/brewers/zatecky-pivovar-carlsberg/2444/, www.beeradvocate.com/beer/profile/4106/27491/,

Žatec (German: Saaz) is a historic town in Louny District, Ústí nad Labem Region, in the Czech Republic. It is famous for an over-700-year-long tradition of growing Saaz noble hops used by several breweries. Žatec produces its own beer and hosts 'Dočesná', its (hops related) harvest festival every year on the town square.
The earliest historical reference to the Bohemian fortress of Sacz is in the Latin chronicle of Thietmar of Merseburg of 1004, when King Henry II of Germany reconquered it from the Polish duke Bolesław I Chrobry. During the 11th century it belonged to the Vršovci - a powerful Czech aristocratic family. It received the privileges of a royal town under King Ottokar II of Bohemia in 1265. A coat-of-arms was given to the citizens by King Vladislav II for their courage during the storming of Milan.
From the outbreak of the Hussite Wars in 1419 to the Thirty Years' War, the town was Hussite or Protestant, but after the Battle of White Mountain (1620) the greater part of the Czech inhabitants left the town, which remained German and Roman Catholic until 1945, when the Germans were transferred to Germany.
During and after the Second World War a Messerschmitt production facility and air base for testing aircraft, including new jet fighters, was located close to the town. In 1948 the production facility continued to produce the Avia S-199, a version of the Messerschmitt Bf 109 aircraft which were sold to Israel, with the initial training for the Israeli pilots provided at the air base. Many other military supplies were flown to Israel from the air base, which helped the new state to secure its independence (https://en.wikipedia.org/wiki/%C5%BDatec).

Zatec is an area which has become famous for its hops. The first hops were grown in 1004 and the brewing followed shortly. The combination of the dark red soil, rich in ferrous oxide (which retains water) and climate allows the region to produce the award winning crop. The Zatec brewery - built in 1801 - is situated inside the Zatec castle walls, overlooking the town and hop fields. The brewery suffered for lack of investment during the Communist years until by 2000 the brew was hardly available even locally, much to the detriment of the Zatec economy. In year 2001 Rolf Munding purchased the brewery from a local business man and began a program of investment which has rejuvenated the brewery and improved the prospects for the beer, brewery and the people of Zatec, both as beer drinkers and brewers. Tomas Lejsek, one of Czech Republic’s leading and most innovative brew masters has masterminded the changes, bringing together new technology, old brewing processes and pure ingredients (www.zatec-brewery.com/).
The Zatec brewery in the town of Zatec in the north-east of the Czech Republic has a bit of history. Although hop cultivation and brewing in the region goes back 1000 years, the brewery itself is a relative newcomer, mashing its tuns for the first time in 1801 - this was at a time when the town's four other breweries couldn't cope with the demand.
The brewery - situated inside the town's castle walls - suffered during the era of Communism, and in 1991 it was bought over, lavished with investment and has thrived since, recognising that the global market is vital for breweries in a country where beer is cheaper than drinking water (www.heraldscotland.com/life_style/13207415.Beer_of_the_Week__Celia_gluten_free_lager_by_Zatec_Brewery/).
The Žatec brewery - built in 1800 - is situated inside the Žatec castle walls, overlooking the town and hop fields. Towards the end of the 18th century, the smaller Žatec breweries could not, between them, cover the demand for beer (at that time, Žatec contained 30 malt houses and 4 breweries, which were used to brew beer by 235 Žatec burghers holding beer brewing privileges). After 30 years of hesitation it was finally decided to build a new brewery in 1797... on the site of the royal castle which had been destroyed. Lorenz Rott, who was a master architect, was commissioned for the project. ... the brewery finally commenced brewing on July 26, 1800, and the brewery was leased by privileged burghers to the brewer for operation. ...The brewery was gradually expanded and modernized. The beers brewed included delicious draft beers, special beers such as “Radniční”, “Maslivecké”, “Vánoční” and “Slavnostní”, in addition to the traditional beers “Samec” and “Kozel”. The remaining breweries in the town were gradually closed, the last one being vývozní Dreherův pivovar PRATOK, which closed in 1948.
It was important that the Beer from the Žatec brewery was recognized for the quality it strived for. In 1873 at the World Exposition in Vienna, the beer was awarded its first medal and diploma and in 1879, during the Trade Exposition in Prague, it was awarded a silver medal from the tasting competition.
In 1880 at the Agricultural and Industrial Exposition in České Budějovice, Žatec beer was awarded a gold medal in the professional tasting, thus one more acknowledgment of the quality of Žatec beer. This tradition was carried further with acknowledgements and certificates of merit from expert panels and professional tasting juries during the Žatec Hops Festival in 1995 (for light lager), 1996 and 1997 (for dark lager), and in 2000 and 2001 (light lager again).
The brewery suffered for lack of investment during the Communist years. In year 2001 Rolf Munding purchased the brewery from a local business man and began a program of investment which has rejuvenated the brewery and improved the lives of many of the local inhabitants.
Tomas Lejsek, one of Czech Republic’s leading and most innovative brew masters has master minded the changes, bringing together new technology, old brewing processes and pure ingredients.
From the day the brewery was established, the commercial presentation of the Žatec brewery always emphasized, in its name, both the traditional burgher ownership – “Měšťanský pivovar” (“Burgher Brewery”) and the location of Žatec. This distinguished label was required and necessary not only because of large number of breweries in the neighborhood of the famous hops district, but also in respect of the competing brewery, Pratok, built in Žatec by Viennese baron Antonín Dreher. The rest of the “newer” breweries in the surrounding region tried at least to sponge off (www.zatec-brewery.com/history%20of%20the%20brewery.html).
Unlike many other leading Czech brands, Zatec uses the traditional open vats for fermentation which allows the taste to stay with the beer.
The lagering tanks (installed in 1835) remain horizontal allowing some of the malt sugars to remain in the beer, creating a fuller and more complex palate. The lagering takes place 80’ underground which is ideal for consistent cold conditions required for lagering. Zatec is lagered for 45 days.
Only the best ingredients are used - Zatec hops, Moravian malt and local water. The home grown hops are used at 3 different stages throughout the brewing process rather than just in the final “hopping” as done by other brands.
The original process and authentic ingredients gives a well balanced malt, hops and fruit finish. Indeed, a beer as beer used to be.
Zatec is naturally carbonated through the fermentation stage. At no time is any CO2 added – giving a less gassy taste.
The brewery also uses the double decoction method – where the wort is transferred back and forth between 2 mash tuns to release as much brewing sugar as possible (www.zatec-brewery.com/about%20Zatec%20Beer.html).
Carlsberg adds the Czech brand Zatec Beer to its portfolio (4/3/2014 8:45)
The Carlsberg Group has entered into an agreement to acquire 51% of Zatecky Pivovar in the Czech Republic. The brewery was established in 1801 and is located inside the castle walls of the city of Zatec, which is in the heart of the famous Zatec (Saaz) hops growing region. The brewery has a production capacity of 0.2m hl.
Premium Czech beer represents a growing segment across key markets in Europe, and following the acquisition Carlsberg will be able to roll out the brewery’s main brand, Zatec, in selected markets across the Carlsberg Group. The Zatec Beer brand is brewed according to original Czech brewing traditions.
The brewery also produces the gluten-free beer brand Celia. Celia is a light lager, produced in a unique way, which preserves the typical taste of Czech lager and makes it possible for consumers who suffer from celiac disease to enjoy a beer (www.carlsberggroup.com/investor/
news/Pages/Zatec.aspx#.Vh6vo_ntlBc).
